Botanicals: juniper, liquorice, elderflower, bitter almond, orange peel, coriander, angelica, lemon peel, orris root
Theginman likes William’s Chase. The company was at the vanguard of the craft gin movement when it set up a distillery at its farm in Herefordshire in 2007. This continues to be a working farm – the potatoes and apples that form the raw spirit are grown there. The company is rightly proud of the provenance in its products; even the pure water used in making its spirits comes is from the aquifer running underneath the apple orchards.
On the nose, oranges, unsurprisingly, feature but juniper is evident as are fruity notes.
Pleasingly, the flavour is not overpowered by orange. It is obviously evident but juniper and elderflower come in early with a long finish of Seville orange lingering.
For the G&T, Fentiman’s Light Tonic was selected, garnished with a twist of orange peel, a slice of dried orange and finished with a misted orange oil spray. The sweet citrus hint of the tonic compliments the bitter orange and makes a wonderfully refreshing summer drink with a long finish; which is just as well as the drink itself disappears alarmingly quickly!
